Cinnamon swirl bread

Fantastic cinnamon bread recipe for those afternoons where you just need a little something extra.

Equipment

  • Kitchen stand mixer (optional)

Ingredients

  • 1 Egg
  • 2 Cups Milk
  • 1 Pack Yeast
  • 7 cups flour
  • 5 oz sugar
  • 1 tbsp Salt
  • 2 tbsp Ground cardamom
  • 5 oz Butter

Filling

  • 4 oz Sugar
  • 4 oz butter
  • 4 tbsp cinnamon (this gives an EXTRA strong taste of cinnamon - if you like it milder, consider going easy here)

Instructions

  • Start by adding the yeast and milk your mixing bowl.
  • Add the spices, then half the flour, then the butter and egg, and finally the rest of the flour.
  • You want to keep this stirring on your machine for about 30 minutes - until your dough is loose from the sides of the mixing bowl.
  • Leave your dough to rest for 1 hour, on the kitchen counter.
  • add a spread of butter, sprinkle that, first with sugar, then with a generous amount of cinnamon.
  • fold the dough over itself, first ⅓ from the bottom, then over that the last ⅓. Leaving you with a long, piece of dough, where all the cinnamon/butter goodness is on the inside.
  • Divide this dough into 12 strings. Take 3 strings and braid them together to form a bread.
  • Place two breads on a baking tray and leave them to rest for another 2 hours.
  • Lightly brush the breads with an egg. Bake them for about 14 minutes at 200 degrees Celsius. (400 F)
